It may seem strange, but I associate peanut butter with summer. My Grandmother’s house did not have air conditioning. I remember sitting in front of the fan eating a peanut butter sandwich on hot summer days. In my own way, I am trying to carry on that tradition. Our family’s peanut butter cookie recipe is perfect for Litha. The cookies are light, not too sweet and easy to make.
Peanut Butter Cookies Recipe
Ingredients
- 1/2 Cup Peanut Butter
- Stick of Butter (Or Butter Substitute)
- 1 Cup Sugar
- 1 Egg
- 1-1/2 Cups Flour
- 1/2 Tsp. Baking Soda
Instructions
Preheat oven to 350 degrees.
Mix together peanut butter, butter, sugar and egg. In the past, I have used crunchy peanut butter and smooth peanut butter. I always just use whatever is in the pantry.

Slowly add flour and baking soda to the dough.

Use a cookie scoop to place cookies on a lightly greased cookie sheet. Dip a fork in flour. Use the fork to press a hashtag pattern into each cookie.

Bake for 10 minutes or until the cookies are slightly brown. They should still be a little soft in the middle. My Mother would cook them until they were crisp and a little crunchy. I prefer a softer cookie, so I take them out of the oven before they are dark brown on bottom.

- 1 Stick Butter
- 1 Cup Sugar
- 1 Egg
- 1-1/2 Cups All Purpose Flour
- 1/2 Tsp Baking Soda
Instructions
- Preheat oven to 350 degrees.
- Mix peanut butter, butter, sugar and egg.
- Slowly add flour and baking soda to the batter. Mix well.
- Use a cookie scoop to place cookies on a lightly greased cookie sheet.
- Dip a fork in flour. Use the fork to press a hashtag pattern into each cookie.
- Bake for 10 minutes or until the cookies are slightly brown. (They should still be a little soft in the middle.)
